What You Will Need
A paper-towel-lined plate.
A source of heat
A large pan.
A medium pot.
A medium bowl.
Ingredients
8 oz. bacon cuts.
4 large sweet potatoes.
1 cup black beans(cooked).
½ oz. cilantro.
2 large red onions.
2 large roma tomatoes.
2 large lime fruits.
2 large poblano peppers(not included in your Hello Fresh meal kit).
2 large avocados.
4 tbsp. sour cream.
2 tbsp. Southwest spice blend.
Salt to taste(Not included in your meal kit).
Directions
Step 1: Wash and pat dry all your fresh produce plus beans, setting them aside.
Step 2: Prepare and cook the sweet potatoes;
Peel and cut these into bite-size(½-inch) cubes.
Place the potatoes in a medium pot then add enough water to cover them by approximately 1 inch. Tip: you can add a little bit of salt if you like.
Now, bring these to a boil, cooking them for about 10 minutes.
Next, drain the remaining water and move on to the next step.
Step 3: Cook the bacon;
Place the meat in the large pan and cook for 5 minutes per side or until each side is crisp, over medium heat.
Thereafter, transfer your cooked bacon to the plate that is lined with a paper towel.
Next, pour out and reserve(for later use)the bacon grease that came out of the meat.
Step 4: Prepare and cook the remaining ingredients;
Halve and peel the onions.
Cut the halved and peeled onions into bite-size(½-inch) pieces.
Next, core the tomatoes.
Cut the cored tomatoes into bite-size(½-inch) pieces.
Thereafter, core and deseed poblano, cutting these into bite-size(½-inch) squares.
Then place the beans in the pan you used for bacon, adding the onion pieces, poblano pieces, plus a drizzle of bacon grease and the Southwest spice.
Now, cook these, tossing them occasionally for about 5 minutes or until softened.
Step 5: Stir in the cooked sweet potatoes and beans;
Add the potatoes to the pan containing the ingredients you just cooked.
Add a drizzle of the reserved bacon grease.
Add salt and pepper to taste.
Toss everything to combine.
Return the pan to the fire and cook the mixture for 5 minutes, tossing it occasionally.
Next, add the beans to the pan and season with salt and pepper to taste, tossing to combine.
Simmer on low heat for 1 to 2 minutes before removing the pan from heat.
Step 6: Prepare the limes, cilantro, and avocados;
Cut each lime into bite-size wedges.
Then roughly chop your cilantro.
Next, halve, pit, and peel each avocado before chopping and placing these in the medium bowl.
Now, season these with salt and pepper to taste plus a squeeze of lime.
After that, mash everything until smooth. Tip: you can use your pestle.
Thereafter, stir in sour cream and half the roughly chopped cilantro.
Once again, season these with salt, pepper, and lime juice to taste.
Step 7: Serve and Enjoy!
Serve the potato mixture on individual plates, topping each with a bacon cut.
Then top, once again, with the sour cream, chopped tomatoes as well as remaining cilantro.
Finally, garnish with any remaining lime wedges on the side and enjoy while still warm
